Berry Delicious

When I went grocery shopping over the weekend, I was delighted to see fresh berry displays all over the store.  It is starting to be that time of year when not only are berries on sale, but they are lush and lovely colors of reds and purples that entice you closer and make you ask yourself, ‘what can I make with these?’  If you are like me, time is never on my side, so when it comes to recipes, the quicker the better.  There are tons of berry recipes out there, but what I like about this one is that it is fast, easy and it tastes and looks like you got the idea out of a fancy cookbook.  You can use any kind of berry combination you’d like and any sort of cake type you’d like.  For the one I made, I used strawberries and raspberries with an angel food cake loaf (the loaf makes it easy to slice and serve).


The Sauce:

Slice up 1 cup of berries and add them to a sauce pan filled with about 1/4 cup of water over medium heat.  Mix in 2 tablespoons of sugar, 2 tablespoons of lemon juice and the zest from half of a lemon.  Stir and let simmer for about 10 minutes, until the berries have broken down into the liquid a bit.  Remove from the heat and set aside to cool down.

To Assemble:

Slice a piece of the cake and lay it on the plate.  Once cooled, spoon the berry sauce over the top (as little or as much as you prefer).  Over the sauce, place fresh sliced berries.  Top with whip cream, ice cream, or leave plain.  Garnish with a bit more lemon zest to finish things off.
